Welcome to the forum.
The information you are looking for is referenced in the Ford Car Parts manual which you can download from this site:
http://squarebirds.org/Manuals/1965/1965-72FordPartsTextCatalog/
It's in the text section on engines.

Build sheet, the original metal tag. Failing that a deluxe Marti might help with figuring it out. ECS doesn't list that application but I think they could make one if they knew the options and build date. Base code number could be K609A. Did you mean non A/C, non shaker?

Kevin Marti's tag book shows 608 for 1970 M code with manual transmission.

Hi Ken welcome to the site - hope you find the help, information and support your looking for related to your concours related endeavors
Currently on my laptop so screen is too small to read all the right boxes in a buildsheet to figure out the correct codes for your application but will get to it. Don't think I can supply the rest of the codes (plant and timing I believe) since I don't have a bunch of original labels. Most often hidden behind AC pumps or did live almost 50 years
Will report back

My M code, Auto, Non Ram Air, Non Cali. emissions, with AC Mach1 has K609AG on the build sheet and on the original engine tag, I'm almost certain that the Non Air version of the same car would be the same code without the "G" on the end...
Hope this helps, John
